Can I use it on any stove? Or in the oven?
Yes to both. Carbon Steel works on any stovetop–gas, electric, glass, and induction. It’s also tough enough for grills, pizza ovens, and open flames, since it can handle temps up to 1000°F.
If I use it in the oven, will the handles get hot?
Our ergonomic long stainless steel handles stay cool* on the stove, but they will get hot when used in the oven or over an open flame. Use mitts or grips when transferring.
*Stay-cool applies only to long handles. All other handles are not stay-cool and become hot to the touch during use. Use caution.
Is it heavier than cast iron?
