Lemon, Lime and Bitters
A popular drink in Australia, often called the drink you have when you’re not having a drink – its palate cleansing and fresh, wonderful as an aperitif or just thirst quenching beverage. Normally made with lime syrup and soda, I prefer this method with real lemons and limes. It’s one you make and taste as you go to find the blend that best suits your palate.

Directions
- To prepare the simple syrup, bring the water to the boil, add the sugar and stir until sugar is dissolved. Chill until ready to use. This will make more than you need and will keep in the refrigerator for several weeks.
- Place the juices in a large pitcher, add 2 cups mineral water and a tablespoon or two of the syrup. Taste and add more water and/or syrup until you have the blend that’s right for you.
- Pour into glasses and shake a few drops of bitters in each glass. Stir and enjoy!
- A refreshing, adult style soda, this drink is very palate cleansing and thirst quenching. Made with fresh squeezed limes and lemons, a splash of mineral waters, simple syrup and a dash of Angostura bitters to cap it off.
Ingredients
- 4 limes, juiced
- 4 lemons, juiced
- 2 cups sparkling mineral water or soda water
- Angostura bitters, to taste
- simple syrup
- 1/2 cup water
- 1/2 cup sugar
Yield: 4-5 cups
