Maryland Crab Cakes

Here is my variation on a traditional Maryland Crab cake. We started vacationing in Maryland where we started making these, but now we rent a house in North Carolina, thus the southern influence on the recipe.

Every year during the summer my family rents a house on the North Carolina Shore. My job every year is to make these crab cakes. Nothing like fresh crab and fun family vacations.  You can use bread crumbs instead of the Ritz Crackers, but I like the Paula Dean influence the crackers add. You can also use low fat mayonnaise, you won't really notice a difference.

Ingredients

  • 1 lb crab, fresh if possible
  • 1 cup Ritz Crackers, crumbled
  • 1 egg, beaten
  • 1/4 cup mayonnaise
  • 1 tablespoon dijon mustard, sauce
  • 1 teaspoon Worcestershire sauce
  • salt and pepper, to taste

Directions

  1. Mix together all ingredients and form into small patties.
  2. In a frying pan on medium heat, melt a little butter if necessary, then fry each patty for 3 or 4 minutes a side until just browned and firm. Serve hot.
