INGREDIENTS

  • 2 apples, cored and coarsely chopped
  • 2 carrots, coarsely chopped
  • 1 beet (8 ounces), scrubbed and coarsely chopped
  • 1 orange, peeled and coarsely chopped
  • 1 cup water
  • 1 2-inch piece fresh ginger, peeled and sliced

DIRECTIONS

  1. In a blender, combine the apples, carrots, beet, orange, water, and ginger; blend until smooth. Strain and, if necessary, thin with water to desired consistency.
  2. Serve immediately or refrigerate for up to 2 days.
