This Rainbow Veggie Pizza is stacked with fresh, colorful produce, layered over melty mozzarella, and finished with a spicy-sweet drizzle of homemade hot honey. Whether you sauté your veggies or keep them crisp, it’s a flavorful reminder that eating sustainably can still feel like a treat (and look like a masterpiece). Bonus points: it’s a fun way to clean out the refrigerator and start a new Earth Day tradition—one slice at a time!
Directions
- Preheat your oven to 450°F.
- (Optional) Lightly sauté chopped veggies individually if you prefer a softer texture. Otherwise, leave them raw for extra crunch.
- Stretch your pizza dough gently and place it on a pizza crisper or baking sheet.
- Top the dough evenly with pizza sauce, followed by shredded mozzarella.
- Arrange the veggies in a rainbow pattern: Start in the center with red onion, then broccoli, zucchini, yellow squash, orange bell pepper, and finish with red bell pepper as the outermost circle.
- Sprinkle the pizza with pine nuts and minced garlic.
- Bake for 18–20 minutes, depending on the thickness of your crust, until the edges are golden and the cheese is bubbling.
- While the pizza bakes, make the hot honey: In a small saucepan, heat honey and chili flakes over medium-low until it begins to bubble gently (do not boil). Remove from heat and stir in apple cider vinegar. Let it cool, then store in an airtight container.
- Finish the pizza by sprinkling with fresh herbs and drizzling with hot honey right before serving. Enjoy!

Veggie Pizza:
- 1 recipe of storebought pizza dough or homemade (we love this King Arthur Baking recipe)
- 1 cup of pizza sauce
- 1 ½ cups mozzarella cheese (can be plant-based cheese to make this a vegan)
- 1 red bell pepper, chopped
- 1 orange bell pepper, chopped
- 1 small yellow squash, chopped
- 1 small zucchini, chopped
- 1 cup of broccoli florets, chopped small
- 1 small red onion, chopped
- ¼ cup pine nuts
- 3 garlic cloves, chopped
- Fresh herbs to sprinkle on top (basil, thyme, oregano, parsley)
- Olive oil or other cooking oil
- Salt and pepper to taste
Hot Honey:
- 1 cup of honey
- 2 tablespoon of chili flakes
- 1 teaspoon apple cider vinegar
